The base wine for the Gypsy is made using our organic Chardonnay from various years; this helps us make a lovely complex Blanc de Blancs.
Winemaking
Winemaker Notes
Gypsy is made using our home grown organic Chardonnay, which is picked early to get some lovely fresh green apple characters and pressed off skins for cool fermentation in stainless steel. Like a well-bred English girl of yesteryear, Gypsy is sent off to finishing school in the Barossa (not Switzerland in this case) to find her fizz, before coming home to be presented to polite society for all to see and admire in her gorgeous packaging.
